Sunday Cookathon

Life is good when you have nothing to do all day but cook. Today's menu included some grilled chicken for my wife's lunches, some chicken chili and one of my mother in law's favorites, shrimp stuffed portobellas with a red pepper cream sauce. A little something for everyone today, recipes to follow.

Meatballs or Meatloaf Balls over Mashed Potatoes I have been dieting recently, trying to shed the excess Winter hibernation insulation, but I am the only one in the family doing so. My mother in law is very happy to eat salads along with me, and wifey takes one every day for lunch anyway, but there is a flock of wild carb loving carnivores in the house too! Bow Tie Pasta & Spinach with Parmesan Cream Sauce I was buying spinach for my wife's lunch salads , and I just couldn't resist the buy one - get one free offer. Having more than doubled up on the spinach needs for the week, I had to do something with it. Since I just don't have enough patience to make my own raviolis most of the time, I had to go with sauteed spinach in a cheesy cream sauce, or it a creamy cheese sauce? Some pan seared pork chops on the side, and you have an easy, very delicious dinner. You will need... 12 oz Baby Spinach (2 x 6 oz bags, pre cleaned) 1 lb Bow Tie Pasta - Farfalle for the Purists 1 Roasted Red Pepper Diced- took mine from a jar this time, homemade  is much better if you have the time! 1 16 oz can Black Olives, Cut in half, or chopped - YUP! Bacon Cheeseburger Mac

Bacon Cheeseburger Mac Since fusion food is all the rage, i decided to fuse two American classics, Bacon Cheeseburgers with Mac & Cheese. The kids love it almost as much as i do. This isn't going to win any low fat awards, but it steals the show for taste. This will make 4-6 servings, depending how big the kids are. Please don't be scared by the ingredients. This is the flavor that kid's love and this melts beautifully without a rue or baking. 8 oz (1/2 lb.) Small Pasta - went with my boy's favorite shells 4 oz Extra Sharp Cheddar- diced or shredded 8 oz Velveeta - Yup, you read it right - diced 1 lb Ground Meat - Lean Hamburger or even Turkey rocks this dish 1/4 lb Bacon - cut into small pieces 1/4 cup Onion finely diced 1 cup Milk 3 tbsp Vegetable Oil Grill Seasoning Bacon rendering Render the bacon on medium low in a tbsp of oil to get it started.
