Pan Seared Cod with Roasted Radish

  So it's not my prettiest dish yet, but absolutely delicious. The cod was so flaky and happy it just couldn't keep itself together. You will need... - 1-1/2 lb Cod Loin. I had 1 1/2 to well serve 3 people - Blackening Seasoning  - I use my Dads Rub ,  It is simply 2 parts Chili Powder- the "Hot" Mexican on the market shelves usually isn't too spicy. It is simply 1 part each, Black Pepper, Cayenne Pepper, Paprika, Cumin, Garlic Powder, Onion Powder, Dry Mustard Powder. - 1 lb. Radishes - trim end and quarter - 1/2 Medium Onion diced - 1 Red Bell Pepper- bite size strips - 1 Small Poblano Pepper - Olive oil - Salt, Pepper and/or Garlic Powder to taste Preheat oven to 425. Line a sheet pan with foil and lightly oil. Toss all the veg with enough olive oil to coat and season with salt, pepper and garlic powder. Spread evenly on sheet. Steakadillas - Low Carb Steak Quesadilla

  Definitely a family favorite, and we gut out the carbs with Mission Carb Balance tortillas, with only 2g carbs per medium sized tortilla. Ingredients: - 1 lb. Shaved Steak - we use the prepackaged steak from the market, and cut across for finer steak - 1 medium onion diced - 1 pt. mushrooms, sliced - 3-4 Low Carb tortillas or favorite wrap - 6-8 Slices Provolone - or sub in your favorite cheese, can mix shredded w steak mix - Olive Oil for the pan, butter optional for the onions - Salt and Pepper to taste - I love celery salt! - Granulated garlic optional for steak and veg. - Optional Spicy Relish; I mix finely diced dill pickles, purple onions and banana pepper as a super zippy condiment, about 2 tablespoons of each is plenty.  Sweet relish is high in carbs, so I use low carb baby dill gherkins. Smothered Porkchops with Cheesy Broccoli

Today we are cutting the carbs but not the flavor! The idea for the pork chops came from a meal kit from Green Chef, but we've kicked it up a it. The following was dinner for three with leftovers. 1/2 hour prep & 1/2 hour cook For the pork chops: - 3 pork loin chops apx 3/4" thick - Salt or celery salt to taste - Blackening seasoning, I use my pre-made Dad's Rub which is Chli powder, Black Pepper,   Cayenne Pepper, Granulated Garlic, Cumin, Mustard Powder, Onion Powder, Paprika - 2-3 strips of bacon, I used 2 strips thick cut bacon, fine diced for bacon bits - olive oil to start the bacon - 2 table spoons of butter - 1 pint of your favorite mushrooms, I sliced whole baby portabellas - 1 medium shallot fine diced, about 2-3 table spoons. - 4 oz cream cheese - 1 cup of chicken beef stock - Splash of white whine optional - Truffle Powder optional but highly recommended For the broccoli, these can be adjusted to taste of course or what's on hand.   A funny thing hapenned on the way to updating.... This blog has been running since 2011, and to both my followers, Thank You. Apparently, a stay at home dad was still an odd, if not new thing back then. This blog was cited as source material in two different publications regarding food and identity.    A Taste of Power, 2015 and  The Contested and the Poetic: Gender nd the Body, 2014 Not exactly the Nobel prize, and never really considered myself a trend setter.  I no longer work from home, but still nice to be recognized. Radishes, carrots, red bell pepper and onion w salt, pepper n parm-romano ready to roast w pork loin at 375 F for an hour, to follow with 'shroom gravy w pan fried browned mushrooms, chicken stock and cream cheese... Not keto but great lower carb whole food subs for the 'taters, super tasty new fam fav including my MiL, the Maria...
